Monthly Recipes
This perfect summer salad is sure to be a crowd pleaser. It’s a Boilersource favorite.
Cashew, Swiss, and Apple Salad
Prep Time: 45 mins
Cook Time: 20 mins
Total Time: 1 hr 35 mins
Yield: 24 servings

Ingredients & Directions
Salad:
-
2 bags of romaine lettuce
-
2 small granny smith apples, chopped
-
1 - 5 oz bag shredded Swiss Cheese
-
1 cup lightly salted cashew, halves and pieces (OK if not lightly salted)
Toss above ingredients in a bowl
Dressing:
-
½ cup oil
-
¼ cup apple cider vinegar
-
¼ cup sugar
-
½ teaspoon Dijon mustard
-
1 chopped green onion
-
1 tablespoon poppy seeds – add last just before blending
-
Mix all ingredients in a blender (only blend for about 5 seconds - no more)
Toss salad with dressing and serve.
